Baby-Find-It Kids Love These Easy To Make Recipes

Quesadilla- WOW, is this an easy one and my kids LOVE this EVEN on a bad day!

Place about 1 tablespoon of Margarine or Butter in skillet on Medium heat. Immediately place tortilla on melted butter and swish around. Place your favorite cheese in a single layer on the entire tortilla. Then place another Tortilla on top. Flip tortilla and use remainder of butter for that side (or add a smidgen more butter). Watch to see when cheese is melted. Viola, it is ready. The fun part is slicing it with your pizza cutter and they think they are cool little pizza's! My kids even like to try fun things like ham inside it...fun to experiment and they love being involved in this!

Weiner Casserole- ANOTHER easy one and BOY it smells good when it is baking!

Slice one package of wieners into bite size pieces and place in small casserole dish. Optional: Add 1/2 an onion diced and place in dish. Grab your ketchup bottle and squeeze until the wieners and onions are evenly coated with ketchup. Then add approx. 1/4 cup of brown sugar and mix. Then add a couple of tablespoons of Worchestire sauce and mix well. Last but not least, take a couple of strips of bacon, quarter, and place along the top of the weiner mixture. Place dish in preheated oven at 350 Degrees for approx. one hour. (Until Bacon is done)

Homemade Chicken Nuggets- BETTER than you-know-who's!

This is a little more time consuming but well worth it. If you make a huge batch you can freeze it for another day, however, I place mine in fridge and the kids snack on it cold the next day!

Before you get started, get 2 buckets that have a lid (I use my recycled ice cream buckets for EVERYTHING, they are GREAT for this meal!)

In one bucket or bowl mix:
Approx. 1 cup of Italian Style Bread crumbs
Approx. 1/2 cup of flour
Approx. 1/4 cup Corn meal
Approx. 2 Tablespoons Garlic Salt
Approx. 2 Tablespoons Paprika
Secret Ingredient (Lemon Pepper)

In your other bucket or bowl mix:
Approx. 1 Cup Italian Dressing
1 Tablespoon Lemon Juice
1 Tablespoon Olive Oil

You can either cut chicken into nuggets sizes or strips, whatever their little hearts desire! Once you have cut the chicken, place them in the liquid bucket/bowl and let them sit while your Deep Fryer or Frying Pan is getting hot. This gives you some time to kind of clean up behind yourself. Make sure the chicken is well coated with liquid and when you are ready to fry, then place the first batch in your dry mixture and shake, pat and roll. Then place in fryer. It only takes about 4-5 minutes per batch so the cooking process is rather quick! And you are on your way to scrumptious nuggets.

If you have the energy you can use the oil left in the fryer to make some yummy french fries! I just add a little garlic salt and paprika to my fries and they are a smash!
